Artisan baker Clare Sivam uses our sea salad in her delicious range of breads
There is nothing more homely than the smell of fresh bread in the morning. It’s one of those things that will forever be connected to the good life; a cottage in the country, walking the dogs on the beach, the sea lapping against your feet. Clare Sivam left London nine years ago and came to Cornwall to find that life and since then she has begun to sell her bread commercially.
Clare bakes a range of boutique breads from her cottage in Bissoe, a rural village tucked in the Cornish countryside. Every morning she gets up at 6 AM to start baking and sometimes she’s still at it at 11 at night! She favors traditional bread baking techniques, but her flavour combinations are original and full of flare.Her loaves are works of art, a far cry from the mass-produced, nutritionally-defunct form of bread we have grown to accept as the norm. She makes beetroot flatbreads, fennel and raisin fougasse and now the Cornish Seaweed faltbread, tasty loaf with an ocean tang using a blend of dulce, nori and sea lettuce.
If you fancy giving it a try, Clare currently sells her bread to the Pandora Inn in Mylor and soon, many of her other clients (The Punchbowl and Ladle in Feock and The Norway Inn in Perranarworthal)
