Potatoe Cakes

April 12, 2017

This is a really goo Sunday morning treat served with poached eggs, wilted spinach and fresh baby toms. Dulse has long been used as a vegan alternative to bacon with its salty, smokey, baccony taste so works really well here.

4 large potatos grated

2 tsp dulse or sea salad Add To Cart

1 onion finely chopped

1 egg

2tbsp plain flour

Vegetable oil for frying

Turn the oven to 100C. Mix all the ingredients except the oil in a bowl. You may need to add a little more flour to make it a nice thick paste.

Heat a pan with a good slug of oil oven a medium heat. When this is hot drop in large dollops of the mixture and flatten to make ¼ inch high pancakes. Fry for several minutes on each side turning once. Place in the oven to keep them warm until serving. Repeat with all the mixture.
