Kelp (Kombu) Pesto Recipe

Creamy Avocado and Dulse Pesto 

This seaweed pesto packs in the umami, whether it's used on a piece of toast for a bruschetta, or weaved into pasta. With the addition of avocado, you've got a deliciously rich sauce on your hands. 

Ingredients 

  • 1 ripe avocado
  • a large bunch (about 40g/1 and a half oz) of fresh basil 
  • 30ml/2 tbsp flaked dulse 
  • 115g/4oz/1 cup walnuts, lightly toasted
  • 75ml/5 tbsp extra virgin olive oil
  • 1 garlic clove 
  • seaweed salt and ground pepper, to taste
  • 45ml/3 tbsp lemon juice

Method 

Put all the ingredients into a food processor and pulse until a cream sauce forms. If you can make in a pestle and mortar, even better, as this will release more flavour from the basil.
